Remove your meats from the oven 5-10 degrees before the actual desired temperature has been reached. Meat continues to cook for several minutes after being removed from the oven. As the meat is left to rest for 10-20 minutes before being served, it will reach the appropriate recommended internal temperature. This method will prevent overcooking and drying out the meat.
