MARINATED FLATTENED CHICKENS

COOKING


Oven Method:

  1. Preheat oven to 350 degrees.

  2. Remove chicken from bag and place on a prepared baking sheet or roasting pan.

  3. Bake skin side up, uncovered for 1 hour, 20 minutes, checking the condition of the skin regularly after the first 30 minutes. If browning too fast, cover loosely with aluminum foil. The timing of this will vary between the different marinades due to factors such as sugar content.

  4. Once an internal temperature of 165 degrees has been reached, remove from oven and let rest for 10 minutes before carving into portions and serving.


BBQ Method:

  1. Turn on burners on one half of the grill over medium flame, or bank lit charcoal on one side of the BBQ, setting up for indirect grilling, and get the BBQ temperature to approx. 350 degrees.

  2. Remove chicken from bag, allowing excess marinade to drip off, and place skin side up on the "cold" side of the BBQ and close the lid.

  3. Cook for 30 minutes, or until the chicken is about 90% cooked through.

  4. Flip chicken over and transfer over the flame. Continue cooking over direct heat, turning 90 degrees as needed to achieve desired grill marks, approximately 5-10 minutes. Flip chicken over and cook an additional 5-10 minutes until chicken is cooked through.

  5. Once an internal temperature of 165 degrees has been reached, remove from BBQ and let rest for 10 minutes before carving into portions and serving.
