PANCETTA WRAPPED PORK ROAST

Ontario Pork Capicollo, butterflied open, rubbed in our lemon herb marinade and stuffed with spinach and red onion, then rolled and tied for an even distribution of meat and stuffing in each slice.

COOKING


  1. Preheat oven to 325 degrees. Place roast in an appropriate sized roasting pan, depending on the size of your roast.

  2. OPTIONAL: Pour 1/4-1/2 cup of white wine in the bottom of the pan prior to roasting.

  3. Place uncovered in the oven and cook for approximately 30 minutes per pound, until the internal temperature reaches 145 degrees for medium (slightly pink in the middle), or 160 degrees for cooked through (no pink)

  4. Remove and let meat rest for 10 minutes before slicing and serving.
