Our AAA Bavette; is a loose textured, highly flavoured flat cut. While this cut bears some similarities to flank steak. Located underneath it, bavette has looser muscle fibers and more closely resembles hanger steak or skirt steak. It has often been called the 'butcher’s cut', because it is said butchers reserved it for their own pleasure. Juicy and tender, best cooked over high heat or broil, in a pan or on a barbecue.
