Our Mennonite farmed, naturally-raised capons are always free-running and free-feeding. This promotes healthy and lean poultry. Our strict feeding program of grains, barley, wheat shorts and distillers grain enhances the flavour tremendously. Once our capons are processed, they are hung to dry overnight (air chilled) to avoid any unnecessary use of cleaning chemicals or water retention.
Capons are the male chicken (A.K.A. rooster) and are only available during Thanksgiving and Christmas time. Being the male, they are larger than the normal chickens we carry throughout the year, usually coming in betwen 6-8 or 8-10 LBS.
